The freshest herbs make the freshest sauce. When using the fresh use three times the quantity of the dry due to the intensity of the product.

In all sauces consistency is very important. When a sauce has simmered the proper length of time it begins to coat the spoon used to stir it. This process should be done without concentrates like tomato paste of puree as these can easily overpower your ingredients natural flavors.
