Specialty Food Division Chairman Frank Parseliti (Frank’s
Marinara Sauces) wants his fellow specialty food entrepreneurs to
know there is a website packed with all sorts of useful – and necessary
– information for a variety of product categories. The Northeastern
Center for Food Entrepreneurship at Cornell University offers an extensive
list of fact sheets and publications, most of them free. Topics covered
range from preliminary investigative questions such as evaluating
your fit as an entrepreneur, the pros and cons of owning a specialty
food business, food manufacturing kitchen requirements, and business
plan and marketing basics, to more product-specific fact sheets covering
regulations and food safety considerations for smoked meats, preserves,
dairy items, and acidified foods. The site also has guides to scheduled
process, required food product analyses, and equipment information.
