| Rumor has it that the average American eats between
50 and 80 pounds of chicken every year! Add a burst of flavor to the
humble bird with Prosperi Balsamic Vinaigrette dressing. Whip up this
fun lunch or light dinner using the leftover poultry from the grill
or pick up a rotisserie chicken in the market.
1 tablespoon vegetable oil
12 ounces quartered button mushrooms
¼ teaspoon kosher salt
2 cups diced red onion
1 cup diced red pepper
2 pounds cooked, chilled, and cubed chicken meat
½ cup chopped scallions
1 cup chopped deli olives
Prosperi Balsamic Vinaigrette
1 package of 10” tortilla wraps
Heat the vegetable oil in a large sauté pan on medium high
heat then add the quartered mushrooms. Toss with salt, cook until
soft, then set aside. Dice the onion, red pepper, and cooked chicken
into ½ - 1 inch pieces. Roughly chop the scallions and olives
then combine all ingredients in a large mixing bowl. Toss with Prosperi
Balsamic Vinaigrette. Place ½ cup of the chicken mixture
in lower 1/3 of the wrap. Roll towards the top then fold in the
two sides and continue until the wrap forms a cylinder then serve.
