2 lb. ground beef
1 clove minced garlic
1 tsp Italian seasoning
Salt & Pepper
10 oz Palmieri Spaghetti Sauce
1 ¾ lbs. Zucchini
15 oz ricotta che4ese
2 eggs
pinch chopped parsley
½ cup shredded parmesan cheese
8 oz shredded mozzarella cheese
Brown ground beef with the garlic, drain fat. Season with salt
and pepper. Stir in Palmieri Spaghetti Sauce
and Italian seasoning. Beat the eggs with ricotta cheese, add parsley
and a little salt and pepper to taste. Thinly slice the zucchini
lengthwise (about 1/8th thick – do no peel). Grease a 9 x
13 baking pan. Layer ingredients in this order: ½ zucchini,
½ the meat sauce, ½ the ricotta, ½ the mozzarella
and parmesan, repeat until all ingredients are used, Bake at 325
for 45 minutes to an hour until bubbly and zucchini is cooked well.
